Joan Rubió Essencial is a natural white wine without designation of origin, produced byJoan Rubió at Santa Margarida i els Monjos,Penedès.
Joan Rubió, technical director and manager of the vineyard in Recaredo for many years, embarked on his most personal project by bringing his first wines of the 2015 vintage to market. Produced in Cal Tiques, the family farmhouse where Joan has recovered the old facilities where his grandparents made wine from the grapes on their small estate.
All his vineyard has been registered with the CCPAE (Consell Català de la Producció Agrària Ecològica) since 2009, working under the principles of organic farming and biodynamics, minimising the working of the soil and leaving vegetation cover. In the winery everything works by gravity, draining and not pressing, with as little intervention as possible. Thereby obtaining wines that are sincere and highly authentic.
Joan Rubió Essencial is a natural white wine made with Xarel·lo from three small vineyards planted in chalky soils.
After the manual harvest, the grapes are fully destemmed and macerated with their skins in stainless steel vats for 11 days, at this moment they are uncovered and transferred to 500-litre barriques where the alcoholic fermentation will be completed. The ageing takes place in these same barriques for 6 months, and 6 months more in stainless steel vats.
