Domaine des Roches Neuves Saumur Champigny is a biodynamic red wine made by Domaine des Roches Neuves in the AOC Saumur-Champigny (Loire) with the Cabernet Franc variety.
Since 1992, Thierry Germain has been at the helm of Domaine des Roches Neuves, a winery in the Loire Valley, where he cultivates 22 hectares of vineyards of the region’s leading varieties: Cabernet Franc and Chenin. Working with utmost respect for the vineyard, people and time, he uses organic and biodynamic principles in the production of his wines, paying special attention to the soil and the natural balance of the grapes.
Domaine des Roches Neuves Saumur Champigny comes from vineyards with an average age of 25 years, planted in clay-limestone soil and silty sand. The whole estate has Biodyvin and Ecocert certification, which means he uses organic and biodynamic agriculture, no chemical products or machinery. Horses are used instead of tractors. The harvest is carried out manually and placed in small boxes.
After being classified on the selection table, the Domaine des Roches Neuves Saumur Champigny grape clusters macerate for 8 to 10 days and begin to ferment in stainless steel tanks at a temperature of 16 to 22ºC. The fermentation ends at a temperature of 24ºC. It then ages slightly on its own lees for 3-4 months in stainless steel tanks and French oak foudres.
