Della Staffa Cerrone is an organic orange wine produced by the Italian winery Vini Conestabile della Staffa with the Grechetto variety at IGP Umbria, in the Umbria region.
Vini Conestabile della Staffa is a historic winery currently headed by the viticulturist Danilo Marcucci who, after working on one of the most prestigious natural wine projects in Italy, returned home to apply all his knowledge to his territory. In this way, activity in the vineyard is carried out exclusively by hand and in the winery the practices are artisanal and traditional.
Della Staffa Cerrone comes from an old vineyard with clay soils rich in humus located between 300 and 400 meters above sea level. Ecological farming is practiced with organic treatments and respect for the environment. The harvest is carried out manually and placed in small boxes.
In the winery, Della Staffa Cerrone grapes ferment spontaneously with the skins for 4 days in small open vats without temperature control. Then the wine is aged on lees in old juniper barrels for more than 40 years. Finally it’s bottled without filtration or the addition of sulfur dioxide.
With a very special presentation which recalls a label aging over time, Della Staffa Cerrone is a tribute to the know-how of the beginnings of a winery which has reinvented itself over time without forgetting its origins. As a result, a full, tannic and sun-laden orange wine is obtained.
