COS Pithos Rosso is an organic red wine aged in amphora made by Azienda Agricola Cos with the Nero d’Avalo and Frapatto varieties in Sicily (Italy).
In 1980, three friends Giambattista Cilia, Cirino Strano and Giusto Occhipinti set up the COS project. It is named using the first letter of each of their last names, and exists to revive the winemaking traditions of their ancestors. They work to express the depth and character of Sicilian soils through organic farming whilst also making wine the old-fashioned way, on lees and using terracotta containers. The results are very genuine wines that are full of personality.
COS Pithos Rosso comes from vineyards located in the municipality of Bastonaca, Vittoria (Sicily) at an altitude of 250 metres above sea level. These vines are planted on sandy and red soils and cultivated using organic farming and biodynamic treatments. The harvest is carried out manually at the optimum point of ripeness.
In the winery, the COS Pithos Rosso grapes are fermented with native yeasts in terracotta amphorae nailed to the ground to maintain a constant temperature and humidity. This is the first Sicilian winery to revive this ancient tradition that allows the wine to breathe, but doesn’t alter the fruit’s nuances and aromas.
