Château de Fosse-Sèche Eolithe Saumur Rouge is a red wine made mainly with Cabernet Franc plus a little Cabernet Sauvignon. It is produced by Château de Fosse-Sèche and belongs to the AOC Saumur-Champigny.
Château de Fosse-Sèche is a winery standing on a property where there were already vineyards in the thirteenth century. In 1996 the winery was bought by a family and is run by two twins and their partners. They work their vineyards organically and biodynamically, they affirm a great respect for nature and seek to preserve the biodiversity of their terroir.
Château de Fosse-Sèche Eolithe Saumur Rouge comes from vineyards that are 10 to 50 years old. Its average yield is very low, at 19 hectolitres per hectare, which ensures a balanced grape. The vineyards are in plots with soil that originated in the Jurassic period, formed with gravels bound together by a slightly clayey soil.
Château de Fosse-Sèche Eolithe Saumur Rouge macerates with the skins for 3 to 5 days. Once fermented, it is aged on lees for 21 months in cement tanks. It has a ageing potential of about ten years.

Château de Fosse-Sèche Eolithe Saumur Rouge 2015 has notes of raspberry and red currant, with touches of rose. On the palate it is light and refreshing. Touches of raspberry return, mixed with hints of minerals. It is an elegant and fine wine.
