Casebianche Cumalè Fiano Cilento is an organic white wine made by the Casebianche winery with the Fiano variety in the DOP Cilento, in the Campania region (Italy).
Casebianche is a family winery that Pasquale and Elisabetta have managed since 2000. Located in Torchiara, in the Cilento National Park (Salerno), they make their wines by hand, using only organic grapes grown on the estate itself and vinifying them in a sincere, simple and natural way with respect to the territory.
Casebianche Cumalè Fiano Cilento comes from 1.3 hectares of vines lying 50 metres above sea level. These vines are planted in clay and calcareous soils with a medium texture and rich in organic matter. They are cultivated using organic agriculture and no chemicals, taking care to preserve the natural balance of the terroir. The harvest is carried out manually at the optimum point of ripeness.
In the winery, 50% of the grapes are destemmed and the rest are pressed whole. The Casebianche Cumalè Fiano Cilento must ferments in stainless steel tanks at a controlled temperature with a 3-day skin-contact maceration. It then spends 6 more months in stainless steel tanks and 3 in bottles.
