Maurizio and his wife Fabiola, who founded Casa Belfi, have revived the winemaking tradition of the Treviso region in the town of San Polo di Piave with their minimal intervention wines. In each of their wines, the land, the vine, the seasons, the weather, the sun and the rain are the main responsible. This results in natural wines with a contemporary style and a strong local identity.
Casa Belfi Naturalmentefrizzante Sui Lieviti comes from their own vines planted on medium-textured soils with a pebble base. They are cultivated using organic agriculture, experimenting with new biological and biodynamic methods to preserve and improve the balance of the vines.
In the winery, the Casa Belfi Naturalmentefrizzante Sui Lieviti must is fermented in steel with native yeasts at a controlled temperature. Following fermentation, the wine is kept on yeasts in stainless steel tanks for about 6 months. The wine is then bottled unfiltered and unclarified, and alcoholic fermentation ends as the residual sugars turn into alcohol and carbon dioxide.
