Being true to oneself is a key part of being happy. One person putting this into practice every day is Bruno Rochard, a winegrower who took over the family estate in Rablay-sur-Layon, in the Loire Valley in 1998. He stuck to his beliefs and revolutionised the winery, implementing organic and environmentally friendly practices. To do this he gradually and methodically reduced the size of his domain by approximately a third of its original size and converted all vineyards to organic. This was a great decision that will make the winery a benchmark for natural wines in the Loire in the coming years.
In his winery, Domaine de Mirebeau creates wines that reflect the affable, simple and cheerful character of their creator. One example of this is Des Boires et des Bulles, a natural sparkling wine made from 40-year-old Chenin Blanc grapes planted in clay, gravel and schist soils. These vines are cultivated using organic and biodynamic agriculture with minimal intervention and avoiding the use of chemicals, additives and technology. The grapes are harvested manually when they reach optimum ripeness.
In the winery, Bruno Rochard Des Boires et des Bulles is vinified using the ancient method. That means the grapes are firstly fermented with native yeasts and, when the must is still developing, it is poured into the bottle unfiltered and without adding any sugar, where it finishes fermenting and develops the carbon dioxide.
