D.O. Bierzo (Castilla y León)
Bembibre is a red wine produced by the Dominio de Tares winery in Bierzo. The winery is found in the heart of El Bierzo, north-west of the province of León.
Bembibre is 100% produced from Mencía, the most characteristic variety of Bierzo. The grapes come from old vines, more than 60 years old, planted on slate and granite soils with a deep incline.
The vines are located on 6 different plots and are at an altitude of 600m above sea level. The harvest is done by hand, bunch by bunch, and grapes are selected upon sorting tables upon reaching the winery.
Once in the winery and stemmed, the grapes undergo 25 days of fermentation in stainless steel tanks with natural yeasts. After winemaking is complete, Bembibre ages for 16 months in Allier French oak barrels of 225 litres. Once aged, it is bottled unfiltered and spends another 24 months in bottle.
In the mouth shows a structure with a very good step in mouth fat, full, soft and elegant. Final comprehensive and very long, with a very good persistence, it is guided by a good acidity, dark fruit and balsamic, with input from roasted (cocoa) and in mint posgusto where reappears the heart of black plum and spicy.
