Agostado Palo Cortado 2017 is a fortified wine, made in Sanlúcar de Barrameda in Cádiz, Spain, with the local varieties Palomino, Rey and Perruna de Trebujena, aged for 10 months in oak barrels.

Agostado Palo Cortado comes into existence in Bajo Guía itself, a spectacular beach in San Lucar de Barrameda. There, since 2015, in an old boat workshop opposite the Doñana reserve, Ramiro Ibáñez has established his Cota 45 winery, where the oenologist from Cádiz aims to transfer the characteristics of each vineyard to the wine and recover the traditional varieties of the area. 

Specifically, with this name, Ibáñez refers to the meters above sea level where he himself considers that the best albariza (the spongy soil characteristic of the area) is to be found. This characteristic helps the vines to cope with the summer drought, thanks to the water reserves formed during the rainy months.

As for the elaboration of Agostado Palo Cortado, lbáñez mainly bases it on two principles: spontaneous fermentation and achieving the necessary alcoholic strength without adding wine alcohol (a practice known as fortification). In this way, to obtain the natural alcohol, it’s necessary to start from a high concentration of sugar, which is achieved with a previous brief sunning of the grape.

The subsequent minimum ageing of two years (with four months under a flor cap) and 10 months in American oak casks (with oxidative ageing) make Agostado Palo Cortado the exclusive choice - only 1000 liters are produced - to get to know the tradition and soul of the Jerez region.
