Fino and Manzanilla. Two wines from Jerez. Two similar wines. But... do you know what the differences are? Both are wines made from grapes of the Palomino Fino variety and subjected to a biological ageing using the solera and criadera method. And so? Aren’t they the same thing? No. Manzanilla is a wine produced in the town of Sanlúcar de Barrameda. Whereas Fino is produced in Jerez. The main difference is the proximity to the Atlantic, and the humidity this brings. Due to the location of Sanlúcar, manzanillas tend to be finer and more subtle because the flower veil stays thicker, in addition to presenting a more saline touch. Finos, on the other hand, tend to have more volume because they don’t receive the direct influence of the Atlantic. Check out the differences yourself.
