Villalar is a barrel-aged red wine made by Bodega La Mejorada with the Tempranillo variety in V.T. Castilla-León.
Bodegas y Viñedos La Mejorada has a historical location in the city of Olmedo (Valladolid). An old monastery that was built in the fourteenth century and where viticulture and winemaking have been a pillar for centuries. In 1999, the monastery and its 140 hectares of land was acquired by Rafael Moneo. An architect who, captivated by the building, began restoration works and transformed it into the winery it is today. The project is committed to seeking the natural balance of the ecosystem in all its wines. Villalar, surname of one of the voices of the Comuneros revolt in the 16th century, is a tribute to the intimate relationship he had with the La Mejorada monastery.
Villalar strains are planted in deep, sandy soils, surrounded by a continental climate. The absolute best conditions to guarantee low yield but high quality. They use respectful viticulture methods and no chemical products. The harvest is carried out manually into 15 kg boxes when the grapes are at optimum ripeness.
Once in the winery, in this case in the old monastery cloister, the architecture helps establish the order of the winemaking process. Villalar grapes undergo a 4-day low temperature pre-fermentation maceration. Alcoholic fermentation takes place in stainless steel tanks and then the wine is aged in French oak barrels for 12 months.
