About Vassaltis Nassitis
Vassaltis Nassitis is a white wine on lees made with the native Assyrtiko and Aidani varieties in the PGI Cyclades appellation, on the island of Santorini (Greece) by Vassaltis.
Named after the volcanic rock which covers the entire Greek island of Santorini, Vassaltis became Yannis Valambous' personal project when he returned to his hometown in 2010 to reclaim his family's 5 hectares of vineyards. From then on, work began to recover traditional Greek varieties which provide complex white wines with a great mineral character.
Vassaltis Nassitis originates from vineyards planted in basaltic soils with deposits of aeolian sand, located 365 meters above sea level. They are old vines between 50 and 80 years old and are worked with respectful agriculture. To protect the grapes from strong winds and the summer sun, a kind of nest is built with the vine. The yield is limited to 12hect/ ha and harvest is carried out manually.
Almost a third of the Vassaltis Nassitis grapes are pressed as a whole bunch; the rest are de-stemmed. Each variety is vinified separately, fermenting in stainless steel tanks at a controlled low temperature. Finally it stands on its lees for 6 months.
Under the name "Nassitis" which in the Doric dialect means "island", Vassaltis Nassitis is an example of the white varieties that originate from and express themselves in the archipelago of the black stone. Elegance, vivacity and much minerality.
