About Vantorosso Valpolicella Classico
Valis polis cellae. The valley of the many wineries. According to legend, this is the Latin name the Romans attributed to Valpolicella, the northernmost area of Verona in northern Italy, famous for its wine-growing tradition.
In this valley (bordered to the west by Lake Garda and to the east and north by the Lessini Mountains) are the Vantorosso wineries where Vantorosso Valpolicella Classico is produced from carefully selected vineyards.
In general terms, the Valpolicella Classico is a red wine made from vines located in the oldest areas of Negrar, Fumane, Marano, Sant Ambrogio and San Pietro in Cariano. Vantorosso Valpolicella Classico is grown in Fumane, on hills where grapes grow facing south-east, between 350 and 400 meters above sea level. The sum of the continental climate influenced by Lake Garda (which acts as a thermal regulator), plus the soil (clayey, calcareous and rich in stones and rocks), result in a grape of great quality.
The vinification of Vantorosso Valpolicella Classico begins in the last 10 days of September with manual harvest. Once the grapes have been harvested and selected, they’re transferred to stainless steel tanks, where they ferment for 10 days at a controlled temperature between 25 and 30ºC. Finally, the ageing of Vantorosso Valpolicella Classico begins in stainless steel tanks (where it will remain until September) and will be completed with a further three months in the bottle.
