Valerie Frisón is an oenologist who, working with her husband since 2007, has been revolutionising winemaking in the Cote des Bar sub-region of Champagne. An area that has always been considered inferior, which means it has never had the prominence it deserves. Val Frisón is responsible for biodynamically cultivating 6 hectares of vineyards located in the town of Ville-sur-Arce to create pure, natural and very expressive wines.
The Val Frison Cuvee Portlandia Brut Nature grapes come from plots with limestone soil and plenty of pebbles. Since 2007, they have been cultivated using biological agriculture. Nowadays the vineyards are cultivated biodynamically in a way that fully respects the environment. Once the grape reaches optimum ripeness, it is harvested by hand.
In the winery, Val Frison Cuvee Portlandia Brut Nature ferments spontaneously with native yeasts in used French oak barrels. It then ages for 9 months on lees and 19 months in the bottle. It is not filtered or clarified and there is no dosage. No more than 23 mg / l of SO2 is used.
