Thymiopoulos Naoussa is a biodynamic red wine made by Apostolos Thymiopoulos in the PDO Naoussa appellation in Macedonia (Greece) with the Xinomavrovariety.
Apostolos Thymiopoulos is in charge of running the family project located to the north of Greece, in central Macedonia. An estate which has been cultivated in a sustainable way for many generations for other wineries and which, now with Apostolos, has stopped selling to start making their own wines in an organic and non-interventionist way.
Thymiopoulos Naoussa is made from the native Xinomavro variety, a grape unique to the Naoussaarea. These are 25 year old vines planted in limestone, shale and clay soils at an altitude of 200-500 meters above sea level. With biodynamic farming and a warm continental microclimate, Apostolos has managed to become a true ambassador of this local Greek variety.
After the grapes are harvested by hand, Thymiopoulos Naoussa is vinified with a maceration of 18 days and spontaneous fermentation with native yeasts in stainless steel tanks. Finally the wine ages in second use French oak 500-liter barrels for 12 months.
In Thymiopoulos Naoussa, Apostolos shows the beauty and fullness of the native Xinomavro variety. The result is a floral, fresh and fragrant red wine.
