Thomas Perseval Grande Cuvée Brut is a biodynamic sparkling wine made by Domaine Thomas Perseval from the Pinot Noir, Pinot Meunier and Chardonnay native varieties in the AOC Champagne denomination in Champagne (France).
Thomas Perseval is a young vigneron who, taking the reins of the family winery, has turned it around through organic and biodynamic viticulture. Located in a Premier Cru, in the village of Chamery, in the heart of the Montagne de Reims natural park, he produces sparkling wines that are a pure expression of the terroir.
Thomas Perseval Grande Cuvée Brut is made by equally blending three native varieties. These are vines planted in sand, clay and chalk soils and have been certified organic since 2012. In addition, biodynamic treatments are used with natural preparations and all work is carried out manually.
In the winery, the Thomas Perseval Grande Cuvée Brut must is fermented with native yeasts and aged in used barrels. It is then bottled unfiltered and unclarified and the second fermentation begins. It spends 3 years in the cellar and is finally disgorged with corresponding dosage.
