Rotem & Mounir Saouma Châteauneuf-du-Pape Omnia is an organic red wine that is a coupage of Red Grenache a little Syrah and Mourvèdre from the AOC Châteauneuf-du-Pape produced by Rotem & Mounir Saouma.

Rotem & Mounir Saouma is a winery in the Rhone Valley that takes the name of the couple that runs it. They both studied viticulture and oenology and their first business in the world of wine was in 1999 with the creation of the micro-negociant Lucien Le Moine, designed to market Burgundy wines. Currently they make their own wines and cultivate their 15 acres in Châteauneuf-du-Pape and another 22 in Côtes du Rhône organically.

The vineyard for Rotem & Mounir Saouma Châteauneuf-du-Pape Omnia consists of 21 acres located in 5 municipalities of the appellation. They are cultivated organically and all the cultivation operations are carried out manually.

Once in the winery the grapes for Rotem & Mounir Saouma Châteauneuf-du-Pape Omnia are vinified in different types of containers: in 500 litre barrels, foudres and concrete tanks and ‘eggs’. It ages for 18 months in these tanks and only a little sulphite is used right after ageing. The final wine is not filtered or clarified before bottling.

Rotem & Mounir Saouma Châteauneuf-du-Pape Omnia is a red wine from Châteauneuf-du-Pape vinified in different types of containers and with a year and a half of ageing. The wine has been made according to the principles of minimal intervention, and offers complex and pleasant aromas and is balanced and deep on the palate.
2015 Rotem & Mounir Saouma Châteauneuf-du-Pape Omnia 2015 is a wine with aromas of violet flowers that also evokes ripe red and blue fruit, spices and balsamic elements. On the palate it is fleshy and concentrated, with flavours of raspberry and blueberries and a sweet taste. It also offers a pleasant minerality, smoked touches and good structured tannins.
