Wines from Beaune are often among the most forgotten Burgundy wines. This has its benefits; because they are not as sought-after, they are usually more affordable. This is true of the wines made by Régis Rossignol, a winegrower who started his own winery, Domaine Régis Rossignol-Changarnier, in 1966 and is known for being one of the first to commit to sustainable viticulture. With plots in the prestigious villages of Volnay, Pommard and Beaune, he makes great classic wines that will leave a mark on your memory but your pockets intact.

One example of his work is Rossignol Changarnier Pommard, a single-variety Pinot Noir from old vines planted in clay-limestone soils and part of the AOC Pommard Côte-d'Or. These vines are cultivated using organic agriculture and no systemic products. The harvest is carried out manually at the optimum point of ripeness. In the winery, a traditional vinification is carried out with a 12-day skin-contact maceration, fermentation with native yeasts and a controlled temperature followed by 18 months of aging in new (20%) and used (80%) oak barrels. The wine rests in the bottle for 3 more months before being released for sale.

This work results in Rossignol Changarnier Pommard, an honest, dense and somewhat rustic wine from one of the pioneers of sustainable agriculture and a living legend in Burgundy.
