Domaine Régis Rossignol-Changarnier is a winery from Burgundy founded in 1966 with vineyards in Pommard, Beaume and Volnay. It has been one of the pioneering wineries in opting not to use chemicals either in the field or in the production process.
Rossignol Changarnier Bourgogne is vinified in a traditional way, vatting the whole harvest, without destemming and performing a 12 day maceration. Once the grapes are fermented, the wine is aged for 13 months in French oak barrels, 20% of which are new and the rest used, and finally ends up being refined for 3 years in the bottle.
Rossignol Changarnier Bourgogne is a wine that can be served quite fresh in its youth and to accompany grilled or roasted red meats but over the years will gradually demand for more prepared and hearty dishes such as those with more cured meats or game fowl.
