Pomum Shya Red is a barrel-aged red wine made by Pomum Cellars in the Columbia Valley, in Washington (USA) with the Cabernet Franc, Cabernet Sauvignonand Petit Verdot varieties.
Winemaker Javier Alfonso and his wife Shylah set up Pomum Cellars, their winemaking project, in one of the main wine-growing areas in Washington State. Originally from the Ribera de Duero denomination of Origin, they are using all their knowledge of the Burgundy style to find the maximum expression of this North American region.
Pomum Shya Red comes from vines aged between 35 and 45 years old. They are cultivated using environmentally friendly agriculture and using the best local suppliers. The grapes are harvested when each plot reaches optimum ripeness.
In the winery, Pomum Shya Red is vinified in a way that maintains the maximum expression of each variety. To do this, the crushed grapes macerate and ferment at a controlled temperature and then the wine ages for 18 months in French oak barrels (20% new). Finally, it is bottled and rests for another 17 months, refining in the winery before being released for sale.
Pomum Shya Red is a coupage dominated by the Cabernet Sauvignon variety and is a rich, powerful and very seductive red wine produced with a top quality raw material and a long and careful aging process.
