Podere Pradarolo Vej Bianco Antico is a natural Malvasia variety white wine produced in the IGT Emilia (Italy) by the Podere Pradarolo winery.
The Pradarolo estate is located in the Parma hills, at an altitude of between 250 and 500 metres above sea level. A natural winemaking winery that was set up in 1989 and that uses methods that are ancient, ecological and connected to the terroir. Alberto and Claudia Carretti have managed to make the most of this microclimate that is characterised by constant ventilation even on hot summer days. This effect is great for vineyard cultivation and they have learned how to convey this in the bottle.
The Podere Pradarolo Vej Bianco Antico vineyards are planted in clay soil with limestone and cultivated using the traditional Guyot system. The strain yield is low, with between 4,500 and 6,300 plants per hectare on a natural grass bed. They practice organic, ecological and biodynamic agriculture without using any chemicals. The grapes are harvested by hand.
In the winery, the Podere Pradarolo Vej Bianco Antico grapes are macerated with skins for 90 days. Fermentation happens with local yeasts and no temperature controls. It is not filtered. It then ages in French oak barrels for 16 months and, once it has been bottled, it rests for 6 months before going to market.
