Philippe Bornard Chardonnay Les Gaudrettes is a natural, ecological, biodynamic and vegan, barrel-aged white wine made by Philippe Bornard with the Chardonnay variety in the French denomination AOC Côtes du Jura (Jura).
When Philippe Bornard inherited his father's vineyards in the town of Pupillin, near the Swiss border, he decided to stop selling the grapes to other wineries and make his own wines. They have 6 hectares of vineyards that produce a wide range of natural wines that have made Jura wines popular. His son Tony now runs the winery and makes innovative and sulphite-free wines.
Philippe Bornard Chardonnay Les Gaudrettes comes from vineyards located at high altitude, on calcareous and clay soils. They are cultivated using ecological agriculture with organic treatments and biodynamic practices. The harvest is carried out manually at the optimum point of ripeness.
The Philippe Bornard Chardonnay Les Gaudrettes grapes are gently pressed and the resulting must begins a slow and gentle maceration in fibreglass. Fermentation is spontaneous with native yeasts and the wine then ages in stainless steel tanks for approximately one year.
