Paso a Paso Orgánico is a red wine from the Mancha region, produced by Bodegas Volver, a winery founded in 2004 by Jorge Ordoñez and Rafael Cañizares, 2 of the most important names in Spanish wine. During the 90´s, they managed to bring Spanish wine to the worlds attention, not just from the Rioja reigon, but from all over Spain.
This wine is made solely from Tempranillo (100%) grapes which come from vineyards that are over 40 years old. The vineyards are situated at around 660 metre above sea level and are on Sandy soils. The area is home to an extreme continental climate, characterised by long icey winters and very hot summers. The montains act as a natural barrier from the sea humidity, resulting in a drier climate.
The vineyards are grown oragnically, even with a cerification from the CAAE. Paso a Paso Orgánico then spends 6 months in French oak barrels.
