Noa de Bohigas is a cava with intense aromas that offers hints of golden apples, medlars and white flowers on the nose, complemented by the notes it takes on from aging. On the palate it is fresh, with the fruit returning accompanied by touches of raw hazelnuts. It has a very good structure and a balanced acidity, with a fine, well integrated and persistent bubble. A cava full of vivacity and elegance.

Noa de Bohigas is an organic sparkling wine made by Caves Bohigas in the D.O. Cava in Òdena, Barcelona.

Caves Bohigas is a centennial family winery whose site, the Can Macià estate, is located in the privileged surroundings of the Anoia river basin, surrounded by 200 hectares of vineyards, grain fields and forests. The Mediterranean-continental climate allows a slow and balanced maturation of the grapes they cultivate, resulting in wines and sparkling wines that reveal the maximum varietal expression and are both fresh and balanced.

Noa de Bohigas is a “blanc de noirs” cava made from a coupage of equal parts Pinot Noir and Xarel·lo, which are ecologically cultivated. After being harvested and selected, they are gently pressed to release only the free-run juice, the finest, which is 30% of the total must. Once the musts have undergone alcoholic fermentation, the wines are assembled and filtered. When these wines are bottled, tirage liqueur is added with yeasts selected for making the best French champagnes.

The sparkling wine ages for at least 15 months in the winery’s underground cellars that remains at a constant natural temperature of 16º all year round. Here, Noa de Bohigas finishes refining and integrating all the aromas. After disgorgement no sugar is added to the expedition liqueur, which results in a fresh and elegant brut nature cava.

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
