MicroBio Sietejuntos Syrah

MicroBio Sietejuntos Syrah is a natural single-variety Syrah red wine produced by the MicroBio Wines winery in Castilla y León, Spain.

Sietejuntos is a tribute to the past: when MicroBio Wines was set up, vinification took place in seven tanks, there were seven barrels of the Tempranillo grape and seven varieties that Ismael Gozalo formed his life philosophy around, because for this winemaker, winemaking is a way of understanding existence and a legacy for generations to come.

The grapes used to make MicroBio Sietejuntos Syrah come from vineyards under one hectare in size located in Nieva, Segovia, Spain. They were planted in 1999 on decomposed grey slate soils with graft wood from Crozes-Hermitage, a renowned wine region in the Rhone Valley, France.

The clusters are left with a higher or lower quantity of the stems, depending on each vintage and level of ripeness, and can reach up to 100% of the harvest. When fermentation begins, pump overs and aeration are carried out to enhance the extraction of the yeast and fruit. Hands and feet are used during the second part of alcoholic fermentation. Pressing is carried out gently. The resulting wine ages in Burgundy barrels used for white wines to round the tannins and set the colour with the right amount of influence from the wood.

A very limited production wine, the Sietejuntos Syrah has the same front label as four other wines but it clearly specifies the variety it is made with.
