

Mercenario Blanco is a white wine without denomination of origin produced by the winery Fazenda Agrícola Augalevada in Cenlle (Ourense).
Iago Garrido is the person behind this winery located next to the Monastery of San Clodio, in the heart of Ribeiro.
At Fazenda Agrícola Augalevada, Iago works the land in an organic way and following biodynamic methods, thus achieving a balanced vineyard with all the microorganisms that are part of a living soil. A granite soil characteristic of the area, which crucially influences the profile of his wines, crisp, easy to drink and very fresh.
Mercenario Blanco is a white wine made with Treixadura, Albariño, Palomino and Torrontés. The 2016 vintage was quite complicated for natural viticulture. Mildew attacks in spring caused a significant loss of the harvest, forcing Iago to buy grapes from winegrowers in the area who also cultivate organically. This is where the wine got its name from.
The harvest is carried out manually. Once they arrive at the winery, and after direct pressing, the must ferments with native yeasts in 400-litre amphorae and in used 500-litre oak barrels. In these same deposits, the wine is aged for 7 months.
