Máquina & Tabla Serapia is a biodynamic red wine made with the Garnacha variety in the VT Castilla-León by the Máquina & Tabla winery.
Máquina & Tabla is the personal endeavour of Oriol Illa and Susana Pastor. A couple that started from scratch in Castilla y León looking for the oldest and most unique vineyards. Oriol is the winemaker who, having spent time at Clos Mogador, Vinya l'Hereu, Heretat Montrubí, Els Jelipins and Prieto Pariente, puts all his experience to good use in the new winery. Then Susana, with a background in arts and entertainment, is responsible for making the wine look great with her striking designs. From Bierzo to Gredos, they have been working to produce high quality biodynamic wines with unique personalities since 2012.
Máquina & Tabla Serapia comes from old vines planted in granite and sand soils lying more than 1,000 metres above sea level. They use organic agriculture practices and the harvest is carried out manually at the optimum point of ripeness.
Once in the winery, the whole Máquina & Tabla Serapia grape is placed in a vat. Fermentation occurs naturally with native yeasts. It then ages in an oak foudre for 10 months.
Máquina & Tabla Serapia is a fluid, fresh and rich biodynamic red wine with the true flavour of the land.
