Manda Huevos is a white wine produced by the winery El Escocés Volante in Calatayud

The grapes come from a single vineyard called Carramainas, located at 900 metres of altitude and planted on clayey-limestone soils with river stones. The vineyard is planted 90% with the Maccabeu variety. In this geographic context, the grapes can bear an extreme continental climate, with extremely low temperatures at night that make the grapes ripen correctly.  

The production of Manda Huevos started out with a manual harvest. Once in the winery, Manda Huevos went through a maceration with whole grape bunches and then, it fermented in egg-shaped plastic containers and 900-litre foudres, ageing for 10 months on its lees.

El Escocés Volador, in the person of Norrel Robertson, has spent more than 8 years experimenting with the Grenache variety in Aragón, and he also makes wine in the wineries of San Gregorio and San Isidro in the area of Calatayud.

Norrel Robertson is "el escocés volante", a Master of Wine and flying winemaker who in 2003 chose Calatayud as a place of residence to be able to develop oenology in Spain and southern France. He ended up starting his own project, focusing on the Grenache and Calatayud. He considers that there is no other country with such richness and diversity of Grenaches as Spain, and those of the area of Aragón, where he works, offer an infinite range of soils, altitudes and orientations.
