Malaparte (Castilla-León) is a varietal wine made of Tempranillo. Thanks to tasks as the green pruning, the cluster thinning, the maintenance of the vegetal cover in the rows, low yields are achieved, which guarantees that high-quality grapes are obtained. The manual harvest is conducted in 12 kg boxes. A double selection is conducted both in the vineyard and at the selection table. Only the free run wine is used in the winemaking. It is fermented and macerated for a total period of 15 days during which temperature is controlled by oxygenation and frequent and frequent pumping over. Malaparte goes through the malolactic fermentation in barrels and through a later ageing for 14 months in 225 and 300 l French oak barrels with a medium toast. It is not filtered nor clarified before being bottled and therefore, precipitate particles can be found. It is recommended to aerate this wine an hour before tasting it.
