To get to the Olympic Games, athletes must devote a lot of time and effort to their training and physical preparation. But above all, it is essential that they have good emotional resilience and are able to maintain their concentration even in high-pressure situations. These are the same qualities Jean-Baptiste Semmartin had when he took the risk of entering the world of wine, eventually emerging victorious after leaving the world of professional fencing. To do this, he first trained in Bordeaux, Collioure and Burgundy and then sought out vineyards that delighted him in the foothills of the French Pyrenees (Jurançon). Known for producing compelling wines from the Petit Manseng, Gros Manseng and Petit Courbu native varieties, if there is one thing his white wines stand out for, it is for being wickedly balanced. An exquisite dance between density and freshness.
The secret of its success lies mainly in its location. These are vineyards planted on steep slopes with clay and rocky soils that allow for an unusually late harvest and which, thanks to the mastery of this former Olympic fencer, achieve an unusual balance. This is clear to see in Lajibe Mansengs, a white wine made from the biodynamically grown Petit Manseng and Gros Manseng varieties, which are harvested by hand when they reach the perfect level of ripeness. The winery is committed to minimal intervention to obtain the purest essence of the place. To do this, the grapes are gently pressed and the resulting must ferments spontaneously with native yeasts. The wine is then aged in oak until it reaches the desired balance between body and acidity.
Classified as Vin de France, Lajibe Mansengs deserves all our attention. A white wine that comes from a wine region, Jurançon, that is experiencing a tremendous renaissance and that characters like Jean-Baptiste Semmartin are taking it to wine Olympics.
