About La Novia Ideal Rosado
La Novia Ideal Rosado is a semi-sweet rosé wine made with the Bobal variety by the Compañía vitivinícola del Mediterráneo in the DO Valencia.
DSG Vineyards & Bruno Murciano David Sampedro Gil (DSG Vineyards) and Bruno Murciano (best Spanish sommelier in 2008) joined forces for a project that gives all the prominence to the terroir and uses Valencia’s native varieties like the Bobal. Using organic and biodynamic practices, they make a collection of wines that are truly representative of the terroir. They have also started working on the Compañía vitivinícola del Mediterráneo, a new project with the Valsangiacomo winery where they make La Novia Ideal and El Novio perfecto, two of the most fun semi-sweet wines.
La Novia Ideal Rosado is made with the native Bobal variety. It is made from vineyards located in the town of San Juan del Valle, in the Utiel-Requena Central Valley (Valencia) and that are cultivated using organic practices that respect the natural balance of the terroir. When the grape reaches optimum ripeness, it is harvested manually.
La Novia Ideal Rosado begins vinification with a partial fermentation of the free run juice until it reaches 6% alcohol. At this point the fermentation is stopped by lowering the temperature to -2oC. Then, a second fermentation is reactivated in cylindrical stainless steel tanks until it reaches 10% alcohol. It then stops again to leave the sugars of the grapes that have not yet fermented, resulting in a wine with a fine bubble and pleasant sweetness.
La Novia Ideal Rosado is a sparkling semi-sweet young wine. Fine bubble, young and bright with a touch of sweetness on the palate.
