Jambon La Tranche de Brouilly is a natural monovarietal Gamay red wine produced by Philippe Jambon.
Philippe Jambon is a small winery established in 1997 in Chasselas. It cultivates its 5 hectares of vineyard organically, and produces natural wines with a minimum intervention in the cellar and without using sulphites. It seeks to keep its vineyards well apart from others whose owners water them, since it understands that some plots are affected by others.
Jambon La Tranche de Brouilly is made by performing a carbonic semi-maceration, vatting part of the vintage without destemming. Fermentation is carried out with the grapes’ own yeasts, which is why commercial yeasts are not added. The final wine is aged in oak foudres for 10 months and bottled without having used sulphur in the any of the process.
