Borja Pérez is the representative of this family winery, and is the person who has helped transform the winery, beginning to produce wines that closer reflect the character of the terroir they come from. The winery now works with native varieties, seeking to preserve the character of the grape throughout the vinification process.
Ignios Baboso Negro is made exclusively with the Baboso Negro grape variety. This is a variety that can be difficult to cultivate, due to its fine skin which makes it more prone to disease.
Fermentation is carried out in stainless steel tanks using its own yeasts, and is later aged for 12 months in oak barrels. Sulphur is added when the wine is being bottled.
