“La cabra siempre tira al monte”, (the goat always goes to the mountain) is a Spanish saying that tells us that no matter how hard we try to escape our origins, they will always be there. So, considering that Miriam and Renato were born and raised in the restaurant and food industry, it is only natural that sooner or later they would follow suit. Their love for the land and for good food and drink gave them the drive to create wines in their own image. At their Geremi Vini winery, located near Lake Bolsena, in Lazio (Italy), they set their course of being faithful to a real territory through natural wines full of character and memories. Geremi Pian di lance is an example of these expertise based on ancient tradition. An orange wine made from the native Garganega, Muscat, Trebbiano and Vermentino grapes from several different small vineyards located around Ischia and Farnese, at 400 metres above sea level, on volcanic soils. Their work uses recovered ancient techniques and strives to minimise the impact of the treatments. In the winery, the grapes macerate for 4 days with the skins and then undergo spontaneous fermentation with native yeasts in stainless steel tanks. There, the wine undergoes a short aging before bottling without filtering or clarifying. Through this Geremi Pian di lance, Miriam and Renato not only show that the land is in their blood, but they also share it with everyone. Pure expression.
