G.H. Mumm Millesime reveals a subtle charm with its light fizz and restrained sweetness. About G.H. Mumm Millesime
"Only the best." For centuries, this has been the main objective of G.H. Mumm, the legendary French champagne house famous the world over for the quality of its sparkling wines. So much so that this company - which began operating in the 18th century - has always been tremendously committed to this motto, remaining at the forefront in terms of both machinery and facilities. And it is only in this way that sparkling wines such as G.H. Mumm Millesime can be obtained.
Specifically, G.H. Mumm Millesime was the first vintage champagne to be made in-house. Brought to life in 1842, this sparkling wine was created from a blend of pinot noirs from the vineyards of the Montagne de Reims, where only the best vintages of the maison were available. Today, G.H. Mumm has a total of 218 hectares of vineyards combined with those of the external supply, acquired directly from the best winegrowers of Champagne AOC.
G.H. Mumm Millesime is harvested by hand between the end of August and mid-October, in a process involving some 1,000 winegrowers. All hands are needed and then some to carry out the work that follows, when the grapes are taken directly to the pressing centers. These facilities have been built very close to the vineyards, right next to them in fact, to ensure that the grapes arrive in the best possible condition. In these presses the pressures exerted are very gentle, with the aim of extracting the least amount of skins and herbaceous substances that could alter the flavor and aroma of the wine. After pressing, G.H. Mumm Millesime is racked directly into tanks, where it is left to settle in cold temperatures for 16 to 18 hours in order for it to be cleansed via decanting. What this means is that during this time, the substances in suspension will slowly fall to the bottom of the tank. Once it is clean and clear, G.H. Mumm Millesime will be ready to ferment spontaneously from naturally occurring yeasts. Each of the plots is fermented separately and then blended together to achieve the unmistakable character of G.H. Mumm Millesime can be obtained.
And from here on, all that remains is to wait and be patient. G.H. Mumm Millesime is taken to rest in the G.H. Mumm cellars, where the second fermentation will take place in the bottle. Time is a wise master that knows how to get the very best out of this wonderful sparkling wine, destined for greatness from the start.
