About François Carillon Puligny-Montrachet

François Carillon Puligny-Montrachet is a barrel-aged white wine made with the white Chardonnay variety by Domaine François Carillon in the prestigious AOC Puligny-Montrachet/Côte-d'Or, in Burgundy (France).
 
Domaine François Carillon is a family estate that has been dedicated to viticulture since the 16th century and is located in Puligny-Montrachet, in the best Côte de Beaune terroirs. In 2010, the latest generation, the two Carillon brothers, decided to part ways, which is when François Carillon set up his own project making complex and exceptional wines using the Chardonnay variety. 
 
François Carillon Puligny-Montrachet comes from 11 different plots with clay-calcareous soil. These are unique terroirs and the vines, with an average age of 35 years old, are cultivated using ecological principles and biodynamic treatments. The harvest is carried out manually at the optimum point of ripeness. 
 
Once the François Carillon Puligny-Montrachet grapes have been destemmed and pressed, the must undergoes alcoholic fermentation in oak barrels for 4 to 6 weeks, followed by malolactic fermentation. After a year in barrel, the wine is further refined in tanks for a period of 6 months.
 
François Carillon Puligny-Montrachet is a white wine with the most refined and mineral expression of one of the most prestigious Burgundy terroirs. A very pure Puligny-Montrachet.
 
 
2018 François Carillon Puligny-Montrachet 2018 is a creamy white wine with deep aromas of white fruit, citrus notes and hints of herbs and minerals. On the palate it is enveloping, elegant and unctuous. A medium bodied, wonderfully salty wine with a subtle exotic finish.
