Domaine des Amiel is the small winery owned by the brothers Aymeric and Jordan Amiel in the Languedoc-Roussillon area. It is located in the small town of Montblac, between Narbonna and Montpellier. The family domaine currently owns 10 hectares of vineyard that it cultivates certified organic and biodynamic. They work with the utmost respect for the vines and their natural environment, understanding that the wine is produced mainly in the vineyard.

The vineyards for Domaine des Amiel Big Black Coq are around 20 to 35 years old. Their approximate average yield is about 20 hectolitres per hectare and produce a very balanced and concentrated grape. They are cultivated certified organic and biodynamic to respect the plants and their surroundings as much as possible.

Domaine des Amiel Big Black Coq is harvested manually in order to perform an initial selection of the bunches in the field and to ensure they arrive in the winery as intact as possible. They are then destemmed, pressed, vatted and fermented with native yeasts. Maceration with the skins is brief, and once the wine has fermented it is aged for 18 months in stainless tanks. It is bottled without clarifying or filtering, and therefore deposits may appear over time in the bottle.
