Lying right next to Burgundy, Jura is one of the smallest wine-growing regions in France but one of the most renowned across the world. With four geographical denominations, each with its own characteristics, it enjoys ancient grape varieties like Chardonnay and Savagnin that are used to make amazing wines. This area is home to Julien Mareschal, one of the few people making wine in the Côte de Caillot, just outside Pupillin. He set up his winery in 2003, and courageously works in the most natural way possible to produce deep, complex and elegant wines.
Made in the AOC Arbois Pupillin denomination, one of his wines is the Domaine De La Borde Foudre à Canon Naturé. A natural white wine made with Savagnin, the area’s star variety, planted at 400 m altitude, on a steep slope of grey and blue marl. Organic and biodynamic vines that have been ploughed and cultivated without herbicides or synthetic products, and then harvested by hand.
But if Foudre à Canon by Domaine de la Borde is known for one thing in particular, it is for being a Naturé Ouillé wine, which means that, after being pressed in half clusters and fermenting spontaneously with native yeasts, the wine is subjected to a delicate and slow oxidation without a yeast cap forming in large 1500-litre barrels for 20 months. The oxygen that has caressed the wine during this time gives it unique characteristics. A white wine rich in minerality and a perfect introduction to the wines of Jura.
