Didier Grappe Chardonnay Novelin Non Ouillé is a natural white wine made by Didier Grappe with the Chardonnay variety and belonging to the AOC Côtes du Jura in Jura (France).
Didier Grappe started his career as an organic winegrower in 2001 in Saint-Lothain, in the heart of the Jura. Micro-productions originating from low-yielding vines and where, starting from the minimum intervention in the vineyard and in the winery, the grape expresses itself in the purest and most natural way.
Didier Grappe Chardonnay Novelin Non Ouillé comes from vineyards with very small yields where they work organically, respecting the environment. Synthetic chemical treatments are avoided and the vines are protected with sulphur and fermented plant extracts.
The Didier Grappe Chardonnay Novelin Non Ouillé grapes are pressed in the winery and the must obtained ferments spontaneously with native yeasts. The wine then ages in used French oak barrels for 36 months. Finally it’s bottled without chaptalization, acid correction, filtering or stabilization.
