About Devaux & Michel Chapoutier Sténopé 2009
‘Sténopé’, pinhole camera in French, is a very simple optical device that functions as a photographic lens to capture a picture of reality. With this same vision, of wanting to capture the best picture of a season, the prestigious champagne house Devaux in collaboration with renowned winemaker Michel Chapoutier created Devaux & Michel Chapoutier Sténopé. A champagne born around shared values of open-mindedness and respect for the terroir.
This is a genuine vintage champagne featuring the Pinot Noir and Chardonnay varieties, two emblematic grapes of the region that are carefully selected from the favourite plots of cellar master, Michel Parisot. The same attention to detail is applied during the pressing of the fruit and the vinification process, which is mostly done in barrels. The second fermentation is carried out in the bottle followed by a long aging in racks.
So, Devaux & Michel Chapoutier Sténopé was born with the challenge of interpreting a season vintage after vintage. A rare champagne full of character that faithfully portrays each unique year.
