Della Staffa Trubiano is a natural, organic and vegan orange wine made by Vini Conestabile della Staffa with the Trebbiano variety in the IGP Umbria, Italy.
Vini Conestabile della Staffa is an ancient winery dating back to 1700, near Montemelino, in the province of Umbria. An abandoned family project that the prestigious Danilo Marcucci revived, after working with some of the best natural winemakers. As a result, he manages to produce authentic wines with a fruity character and a lot of personality.
Della Staffa Trubiano comes from vineyards planted on clay soils with a calcareous base at 350 metres above sea level and near Lake Trasimeno. These vines are cultivated using organic agriculture and biodynamic treatments, and the harvest is carried out manually when the grapes reach optimum ripeness.
In the winery, Della Staffa Trubiano grapes are placed directly into the press. Fermentation is spontaneous with native yeasts in fibreglass barrels with 2 days of maceration on the skins. It is then fermented for 6 months in old chestnut wood barrels. It is finally bottled without being filtered or adding sulphur.
