D.O. Empordà (Catalonia)
De Cap a Peus is a white wine produced by the JOC winery in the D.O. Empordà. The winery is situated in San Mori, in the municipality of Alt Empordà (Girona).
The winery is a personal project of local oenologist Jordi Oliver Conti. The philosophy of the winery is based on a profound observation of the terrain, the climate and the vineyards to produce wines that truly reflect where they come from.
De Cap a Peus, known as Joc Blanc Empordà in previous vintages, is a blend of two different grape varieties: Garnacha Blanca and Macabeo. These white varieties can withstand severe water shortages, which is ideal in an area where there is no water table, i.e the accumulation of ground water.
The vineyards are cultivated on granite soils and terraces, which provides a great minerality and can enhance the varietal aromas. The winemaking process is carried out using conventional methods. Maceration and fermentation are carried out at controlled temperatures.
