About Colosia Manzanilla
Colosia Manzanilla is a manzanilla produced under the D.O. Manzanilla - Sanlúcar de Barrameda by Bodegas Gutiérrez Colosia, situated in the Puerto de Santa Maria, Cadiz.
The winery was founded back in 1838 and is situated at the mouth of the River Guadalete, on the Bay of Cadiz. The location of the winery is perfect for the production of wines, with the dry Levant wind and the humidity of the Atlantic offer an ideal self-regulation of humidity.
In order to produce this Manzanilla, the wine must be moved to a winery in Sanlúcar de Barrameda, since this is the only town where you are able to produce under the name Manzanilla. This vinification process is similar to that of a fino, made also exclusively with the Palomino Fino variety, but the character is slightly different due to the special environmental conditions of Sanlúcar, with a greater degree of humidity.
