Ca' Di Mat Valautín Garnacha is a barrel-aged red wine made by Ca' Di Mat with the Garnacha Tinta variety in the D.O. Vinos de Madrid (Madrid).
Having set up two projects in Ribeira Sacra, Curro Bareño and Jesús Olivares decided to start a new winery much closer to their home; Ca' Di Mat, “House of Fools” in a Piedmont dialect. This is a family estate at the foot of the Sierra de Gredos with a total of 20 hectares where vines, almond trees, olive trees and orchard all grow together. The area has granitic soils and the Garnacha variety stands out for its elegance and complexity.
Ca' Di Mat Valautín Garnacha comes from several small vineyards in the town of San Martín de Valdeiglesias. These are old vines planted in granite soils and facing in different directions in relation to the sun. They are cultivated using environmentally friendly agriculture, using sustainable and ecological practices. When the grapes are ready, they are harvested manually.
In the winery, the Ca' Di Mat Valautín Garnacha grapes are gently macerated whole for 90 days. They then ferment with native yeasts and age for 12 months, half in concrete and the other half in 500-litre barrels.
Ca' Di Mat Valautín Garnacha is a very different red. This wine starts life in the granitic soils of the Sierra, and like a good Gredos Garnacha, it is smooth and delicate with a marked acidity.
