Les Riceys, a peaceful village surrounded by vineyards located in the Laigne valley, between Champagne and Burgundy, is today the town with the largest vineyard area in the Champagne AOC. It is also the only Champagne Cru that contains three appellations of origin: Champagne AOC, Coteaux Champenois AOC and Rosé des Riceys AOC. But if there is one thing that makes this town in the Aube department stand out, it is for having the steepest slopes with the famous Kimmeridgian limestone of Champagne. An identifying feature that has allowed Domaine Alexandre Bonnet, a winery located in this town, to showcase such a unique terroir with very special sparkling wines.
In the case of Bonnet Blanc de Noirs, we are looking at a sparkling pinot noir from 25-year-old vines planted in clay and limestone soil of the Kimmeridgian variety. Traditional agriculture is implemented, and the grapes are harvested by hand in small boxes to ensure that the grapes remain intact, and are immediately transferred to the cellar to avoid oxidation. After careful selection, the grapes are vinified in stainless steel tanks. Once the base wine is obtained, it is bottled to initiate a second fermentation where it remains for about 60 months. Finally, disgorging is performed and a dosage of 10 grams per litre is added.
If the pinot noir variety already offers us finesse and elegance, then combined with the prestigious Kimmeridgian limestone from Champagne, the result could not be more delicate. Bonnet Blanc de Noirs is a fresh, balanced and versatile sparkling wine that triumphs wherever it goes.
