Characteristics of Zárate Balado
Zárate Balado is a white wine produced by the Zárate winery in the Rías Baixas.
The Zárate winery is a historic cellar in this region, pioneering the development of albariño since the eighteenth century. Zarate Balado is a varietal Albariño. The grapes come from two smallholdings, Pago El Balado. "Balo" means wall in Galician and this plot is surrounded by a wall of granite. The soils are poor in organic matter and produce ripe grapes with a low yield.
The harvest is done manually and it is in the plot that grape selection takes place. Once in the winery, the grapes are destemmed and pressed gently. After a light racking, they are fermented spontaneously in steel tanks. Zárate Balado remains in its residue for 3 months. A racking occurs and the residue is maintained for 6 months. A low production Albariño. Only 2,500 bottles go to market.
The Albariño grape is a spanish white variety with a strong floral and terpene character, ideal for producing not only young fresh and aromatic whites, but also (barrel) aged wines. Initially the DO. Rías Baixes was only seen as a region of great hope for Spanish whites, but it has managed to turn this hope into reality.
