Yannick Pelletier L’Oiselet is a natural, organic and vegan barrel-aged red wine made by Domanie Yannick Pelletier in the Languedoc-Roussillon French region with the Garnacha Tinta, Cinsault and Cariñena varieties.
Yannick Pelletier is a winegrower who has shares the same philosophy and work methods as the prestigious Didier Barral. He makes natural wines, without using chemicals and only adding sulphur in small homeopathic doses. Continuing with this same way of working in 2004, he set up his own project on a 10 ha farm with very special terroirs and grape varieties in the southern part of the land of the Gauls. His work results in pure, complex and very deep wines.
Yannick Pelletier L’Oiselet comes from a terroir with varied soils of shale, clay and limestone. The grapes are organically and mainly manually cultivated using biodynamic practices to prevent disease without using chemicals. The harvest is carried out manually at the optimum point of ripeness.
In the winery, the Yannick Pelletier L’Oiselet grapes are destemmed and meticulously classified by hand. They are then gently crushed and left to macerate and ferment with native yeasts and no sulphites. Finally, it ages in cement tanks for 12 months.
