Ximénez-Spínola Pedro Ximénez Muy Viejo is a sweet wine made with the Pedro Ximénez variety in the D.O. Jerez-Xérès-Sherry by the Ximénez-Spínola winery.

This winery located in the town of Las Tablas, in Jerez de la Frontera (Cádiz) is one of the oldest in the area. The first references to Ximénez-Spínola date back to 1726. Currently it is the ninth generation who are carrying the family legacy. This legacy is characterised by working exclusively with the Pedro Ximénez variety and the low number of bottles that are released annually. And that is because they believe that quality is more important than quantity.

Ximénez-Spínola Pedro Ximénez Muy Viejo comes from vines planted in white chalky land. This soil is typical of the Marco de Jerez region, forming rocks that keep the water from the rare rainfall in the subsoil. They have a total of 27 hectares of vineyards that are traditionally cultivated. The grapes are harvested by hand in 15 kg boxes.

Once the Ximénez-Spínola Pedro Ximénez Muy Viejo grape has been cut, it is left in the sun to dehydrate for 21 days. After being destemmed and pressed, the raisin must age for no fewer than 15 years in American oak barrels. This process uses the traditional criaderas and soleras system, a continuous blending of wines of various ages beginning with musts from 1918, with each barrel checked for quality. Once ready, it is clarified through natural decantation and gently filtered with cellulose.

The Ximénez-Spínola Pedro Ximénez Muy Viejo sweet wine is considered a cult wine due to its scarcity and quality. An authentic rarity made with sun-soaked grapes.

Ximénez-Spínola Pedro Ximénez Muy Viejo is an intense sweet wine with elegant aromas of roasted coffee and dark chocolate. On the palate it is smooth and fine. The dehydrated grapes dominate, with hints of dried figs and roasted wood. It has a lasting and very pleasant aftertaste.

Winery Ximénez Spínola

Sherry and wines from Jerez are probably Spain’s biggest contribution to the world of wine. Unique and special, there is nothing else like them in the world. A great diversity of Sherry wine is produced in DO Jerez-Sherry-Manzanilla de Sanlúcar, everything from sweet wines to fortified wines. Sweet wines are divided between Pedro Ximénez and Moscatel, depending on the variety used during production. Concerning fortified wines, there is a large range including Finos, Amontillado, Manzanilla, Oloroso, Medium, Cream and Palo Cortado, classified depending on the result of the ageing process under the ´velo flor´. A unique trait of these wines is the ageing process using the Solera Method, a system using various barrels from different vintages. The system uses stacked barrels, where a portion of a barrel’s contents is extracted and mixed with the lower barrel, with the barrel then filled with the contents of the upper barrel. Thus, the new wine is gradually coming to be thanks to the age of the rest of the content of screeds.
