Bodegas Baigorri is a modern winery in La Rioja. A spectacular building in which all movements of both the grape and wine are made by gravity, without applying any mechanical forces.
Despite its short production time, Baigorri is making a name for itself among the wines in Spain, both domestically and internationally.
Bodegas Baigorri is a modern winery founded in 2002 by Jesus Baigorri, who came from a family of winemakers. The winery is located in Samaniego, a small town in La Rioja. An impressive building in which architecture and wine are merged into a single space by the architect Iñaki Aspiazu.
Baigorri is a unique winery. The architectural design of the winery took into account each of the steps performed in winemaking, providing solutions that aid the whole process of development by gravity, avoiding the use of mechanics and thus protecting the grapes from damage.
In 2007 Pedro Martínez Hernández, the current owner, bought Bodegas Baigorri, placing it on the map of quality Spanish wines.
Philosophy of work
The grapes used to make wines of Bodegas Baigorri come from old vines, grown sustainably. After a manual harvest, the grapes are categorized for different ranges of wines. A double manual selection is performed on sorting tables, first of clusters and then grains to ensure the use of only the most wholesome grains in the best possible conditions.
The winery is excavated underground, with different levels, which enables the entire development process to run vertically along different underground floors. All movements of both the grape and wine are made by gravity, avoiding lifts. No receiving hopper or any type of pump is used during the process. The grapes come from the first floor and cross seven underground floors that form the cellar until it reaches a room with French oak barrels where the wine is aged.
